Get Curried Away!

We attempted a healthy curried chicken salad sandwich. Since we both love curry, chicken and sandwiches it was bound to be a success. The recipe can be found here:

We used sour dough bread from local bakery and also used about 4x as much curry powder as the recipe calls for to give it extra curry-goodness - which is key.

The recipe is full of healthy fresh produce so we’ll forgive the fact there’s mayo.

We paired the sandwich with a fresh raspberry mojito to infuse the meal with even more Canadian multi-cultural spirit. The sandwich turned out to be a very refreshing summer delight! (Laura is not responsible for any sentences involving the word “delight” although she did think it was mouth-watering).
